So, I have a new project for the family. I need to get all our old VHS family videos onto the pc for dvd backups. I honestly have no clue on where to start with this one. Any help would be appreciated.

Try it on 1 video and see how long it takes, you probably wont want to do it to very many. Adding a post-processing edge-sharpen filter during encode will take a VERY long time.
