Heat kills parasites and Bacteria but you need to get to high temperatures for a bit of time. Charred or caramelized fat was a pretty good indicator that you have reached that point at least in terms of prehistoric man.
He is saying there are foods or a diet that is required to sustain life. I think he is talking about the bodies desire to maintain itself versus your argument of our lust for beef being the taste of charred fat.
Amino acids may be what your brain wants but it gets you to get those things for it by making you crave charred fat. Fat is what you taste, you literally can not taste much else in meat besides the fat. Craving charred fat is an evolutionary imperative so you kill off at least some of the bad bacteria and parasites with fire/heat. Don't fool your self in to thinking your any less an animal then your cat or dog. Humans are still very much animals and not very smart animals at that, considering what we do to the planet every day, kind of like shitting where you sleep. Most other animals don't do that.
I prefer my meat rare. And with some good seasoning or marinade. Fat just gets in the way of the meat.
Some meat parts, especially beef, are quite deprived of fat. I couldn't tell u the english names of those parts tho, even if it's etiqueted as such here too.
