    I put a lot of my best recipes up on my farm website. I'd love to see more recipes for beef and goat; I am always looking for more to add.

    omfg i want to link you guys to this funny asian cook that has a new female assistant every ep and always treats her so bad and fires her at the end of the show but i cant think of the name!

    edit: mere seconds after making my post i found it out after i remembered a dish, eggplant pizza. the show is called "Pro at Cooking" go watch it and laugh. trying to find the site, may have been taken down =(

    It was a spinoff of purepwnage, after dave quit the show he came back and decided to have his character be a dick.

    Pita bread is actually a nice touch vs using dough... though, notice the noob parmesan they used.

    Rendang Daging (indonesian/malay spicy beef with coconut)

    Ingredients

    1/2 Cup Oil
    3 cm (1 1/4 in) Cinnamon Stick
    2 Cloves
    4 Star Anise
    2 Cardamom Pods
    500 grams,(1 lb.) Topside Beef, cubed.
    1 cup thick Coconut Milk
    1 Slice Asam Gelugor, or 2 teaspoons dried Tamarind Pulp soaked in warm water for juice.
    2 fragrant Lime leaves, very finely sliced.
    1 Turmeric leaf, very finely sliced.
    2 Tablespoons Kerisik,(see Helpful Hint below).
    1 1/2 teaspoons sugar
    Salt to taste.

    Spice Paste

    2 Shallots
    2 cm (3/4 inch) Galangal (from Marks & Spencer !!!)
    3 Lemon Grass
    2 Cloves Garlic
    2 cm (3/4 inch) Ginger
    10 Dried Chillies, soaked in hot water

    How to put it all together:

    1) Chop the spice paste ingredients then puree in a blender until fine.
    2) Heat the Oil in a Pot on a Medium setting until hot,
    then turn down to Low and add the Spice paste, Cinnamon, Cloves,
    Star Anise, and Cardamom and cook for 5 minutes. If it starts to burn, add a
    tablespoon of water.
    3) Add the Beef, Coconut Milk and asam gelagor or Tamarind juice.
    4) Simmer uncovered, stirring frequently, until the meat is almost cooked.
    5) Add the Lime and Turmeric leaves,kerisik,sugar and salt.
    6) Lower the heat and simmer until the meat is really tender and the gravy
    has dried up.
    Approximate cooking time is 1 to 1 1/2 hours.

    7) Helpful Hint :-
    Kerisik is ground coconut.
    To prepare the kerisik, roast 10 oz,(300 g) of fresh grated coconut, either the
    traditional way in a dry Wok,stirring constantly, or in a slow oven until brown.
    Then grind finely, preferably when hot, because then it's crispy and easier to
    grind. Coconut oil may be produced if the coconut is old, in which case, simply
    combine it with the ground coconut.

    if u can find the ingredients where u live this is definatly one of the things u should try.

    My mom is from Indonesia, and taught me how to cook, so i got all family recipes and when i cook i mostly cook indonesian/malay food.

    Cornbread in the South is usually made without sugar, though some regions and many people do like to sweeten their cornbread a bit. It's often the subject of discussion and debate on the forum. This cornbread, with 3 eggs, is a bit richer than most, and very tasty.
    Ingredients:

    * 2 cups yellow cornmeal
    * 1 1/2 cups flour
    * 2 teaspoons salt
    * 2 teaspoons baking powder
    * 1 teaspoon baking soda
    * 2 tablespoons sugar, optional
    * 3 eggs, beaten
    * 1 tablespoon vegetable, for skillet
    * 2 cups milk
    * 1/4 cup melted butter
    * melted butter for brushing top

    Preparation:
    Preheat oven to 425°. Put oil or shortening in a 10-inch iron skillet and place in the oven to preheat while making batter.

    In a mixing bowl, combine cornmeal, flour, salt, baking powder, soda, and sugar, if using.



    In another bowl, whisk together the eggs, milk, and butter. Combine with dry ingredients and stir until all ingredients are moistened. Batter will be like a thick pancake batter.

    Carefully, with heavy oven mitts, lift skillet out and turn to coat all of the inside surface with oil. Pour in batter and return to oven. Bake for about 20 to 25 minutes, until browned. A toothpick inserted in center should come out clean.

    Chicken Chili sir. I've tried turkey chili but the turkey has too much of it's own flavor. I'm "game" to try chicken, but i need a good recipe :p

    the cast iron skillet is the key to great cornbread..no kitchen should be without one...comes in handy for many things.
    Like hitting the old man up side the head when he comes home drunk.
